(Cooking time less than 30 mins)

You will need:

  • 1 Spice Raks Universal Batter mix
  • fresh 4 medium potatoes mashed
  • fresh 1 large onion finely chopped
  • fresh 2 green chillies finely chopped (optional)
  • fresh handful spinach leaf finely chopped
  • fresh lemon (optional)
  • fresh coriander finely chopped 2 tbsp (optional)
  • salt ¾ tsp (season to taste)
  • pepper ¼ tsp (season to taste)
  • turmeric powder ¼ tsp
  • chilli powder ½ tsp (season to taste)
  • cooking oil enough for deep frying                                                                                 


  • Follow the instructions on the Universal Batter mix to make the batter. Heat the oil to medium temperature. Add to the mashed potato, onion, spinach, coriander, salt, pepper, chilli, turmeric powder and a squeeze of lemon juice. Stir until fully mixed. Make round golf size balls from mixture. Dip each ball individually into the batter mix, ensuring they are fully coated and drop into the hot oil. Keep repeating the process until the fryer is full 
  • Deep fry on a medium / hot heat turning occasionally until golden brown
  • Drain well on kitchen paper. Garnish with finely chopped coriander and serve with a wedge of lemon

Serve with minted yoghurt or tomato / sweet chilli sauce
