(Cooking time less than 30 mins)

You will need:

  • 1 Spice Raks Universal Batter mix
  • fresh aubergine 1 large
  • fresh 2 green chilli finely chopped (optional)
  • fresh lemon (optional)
  • fresh coriander (optional)
  • cooking oil enough for Deep Frying
  • 200 ml cold water for Batter Mix                                                               


  • Follow the instructions on the Universal Batter mix to make the batter. Add the green chillies and mix. Heat the oil to medium temperature. Thinly slice about 2-3 mm thick of round aubergine slices. Dip each aubergine slice individually into the batter mix, ensuring they are fully coated and drop into the hot oil
  • Deep fry on a medium / hot heat turning occasionally until golden brown
  • Drain well on kitchen paper. Garnish with finely chopped coriander and serve with a wedge of lemon.

Serve with minted yoghurt or tomato / sweet chilli sauce
